NOWAKI series consists of the knives made of Japanese steel 420J2. It was developed for the goods used in high humidity conditions. Stainless steel 420J2 is strong and durable, hardened up to HRC 53+/-2 on Rockwell scale. The blades are easily sharpened and stay sharp for a long time. The handle is made of 18/10 stainless steel, which is better known as surgical. Accurate seamless connection of the handle with the blade is the key to high hygiene of the products. Hand wash only.
